Cauliflower Cheese

Ingredients :
• 125g butter
• 125g plain flour
• 2 litres whole milk
• 2 tbsp Dijon mustard
• 1kg grated mature cheddar
• 400g of chopped , blanched cauliflower
• 200g grated mozzarella
• Grated Parmesan to finish
Method : 1 . Bring milk to boil and take off heat .
2 . Melt butter in a thick bottomed saucepan , add flour and stir until combined . Add a large ladle of milk and stir in until combined and bring to simmer . Keep adding milk one ladle at a time until all milk is added .
3 . Whisk in Dijon mustard and bring back to simmer , take off heat and add the cheddar and mozzarella then stir until melted .
4 . Check seasoning .
5 . Mix with the cauliflower and place in a baking dish , top with a sprinkle of Parmesan .
6 . Bake at 180 ° C for approximately 10 minutes until bubbling and golden brown .
