Cranberry & Chestnut Stuffing

Prep Time : 20 minutes plus 1 hour rest time Cook Time : 35 minutes Serves : 8
Ingredients :
• 50g dried cranberries
• 35ml sherry
• 1 small white onion , chopped .
• 1 rasher unsmoked back bacon , cut into strips
• 1 garlic clove , chopped
• 200g Cumberland sausage meat
• 70g fresh white or brown breadcrumbs
• 1 tbsp chopped fresh parsley
• 1 / 2 tsp chopped fresh thyme leaves
• 60g chopped cooked chestnuts ,
• 1 small egg
Method : 1 . Mix all the stuffing ingredients together . 2 . Roll into a log shape ( like a sausage ) and leave to set in the fridge for 1 hour . 3 . Bake in the oven for approximately 30 minutes until it reaches a core temperature of 75 degrees . 4 . Pan fry for 5 minutes to add some colour to the roll .
