Officially opened following an extensive refurbishment project , the atmospheric Cowgirl Lounge boasts mood lighting , contemporary interiors and bold modern art to create the perfect , chic datenight destination .
Designed to be a great place to unwind for some drinks before your dinner reservation , or to make a night of it right in the heart of the newly opened bar-lounge , guests are invited to grab a bar stool at the bespoke-designed central curved bar , take a seat in the contemporary and secluded lounge , or venture out to the expansive terrace to choose from a mouthwatering list of cocktails and light bites which promise big flavours from the Cowgirl ’ s signature small plates .
Signature cocktails include the K-Pop Martini , with yuzu-infused Ketel One vodka , Cointreau and passionfruit served with a signature Cowgirl smoke bubble ; the Storm in the Cave , the Cowgirl Lounge ’ s dark ‘ n ’ stormy with Goslings Black Seal Rum , Cointreau , ginger beer and fresh lime juice ; and the Smoked Old Fashioned , with Maker ’ s Mark bourbon , Laphroaig , Angostura bitters and demerara sugar served with a theatrical cloche flourish of oak smoke . While the Light Bite menu , which promises the same big flavours as the Cave ’ s signature Firepit and Korean Cowgirl restaurants menus , offers small plates including the Cowgirl ’ s signature salted caramel popcorn with candied brisket ; cajun corn with Parmesan ; Korean fried cauliflower with pineapple and Gochujang sauce ; and the lounge ’ s signature house buffalo wings featuring the award-winning sauce from Wing Fest 2022 .
Guests can then move seamlessly from drinks and light bites to dinner , taking a seat in the Cowgirl Lounge dining areas to choose from the renowned Korean Cowgirl menu which features group executive chef John Bingley ’ s low-and-slow cooked Cowgirl Meats , which are cooked in the house offset smokers by the in-house pitmasters .
The best way to devour the menu is via the Smokehouse BBQ Board ; a platter bursting with brisket burnt ends , Korean fried chicken wings , Texas-style smoked turkey , sticky glazed baby back ribs , pulled pork and Korean BBQ sausage , to which you can add a range of tasty sides including mac and cheese , and the lounge ’ s special loaded tater tots , which come covered in bacon , cheese and burger sauce .
Open from 7am to midnight ( and beyond !), the lounge can take you from breakfast pastries and coffee via afternoon tea to late night signature cocktails , which can be enjoyed at the bar , at your dining table or next to the new fire pits on the deck where you can watch the sun set over the golf course and grounds while drinking and dining in true Cave style .
