Flat-iron Grilled Breast of Chicken with Kaffir Lime & Coconut Sauce
Ingredients :
• 2 chicken breasts ( cut into slant tikkas )
• Broccoli florets
• Baby corn , halved
• Red onion , thick rings
• Salt and pepper to season
• Pink radish and cress ( optional garnish )
For the marinade :
• 2 tbsp refined oil
• 1 tbsp ginger garlic paste
• 1 tsp chopped green chillies
• 1 tsp turmeric powder
• 1 tsp salt
• Pinch of black onion seeds
• Juice of quarter of a lemon
For the kaffir lime and coconut sauce :
• 10 fresh tomatoes , halved
• 500ml water
• 100ml refined oil
• 2 tbsp crushed garlic
• 1 tbsp ginger garlic paste
• 1 tbsp Kashmiri chilli powder
• 3-4 green cardamom
• 3-4 kaffir lime leaves
• 1 tsp javitri elaichi powder
• 1 cup thick coconut cream
• Salt to taste
Method :
1 . Marinate the chicken in the marinade and keep aside for as long as you can ( from 1 hour to overnight ). Place chicken on wooden skewers and place it on a medium hot grill to sear and further cook .
2 . In a pot , add all of the ingredients for the sauce except the coconut cream . Allow it to cook thoroughly and blend it into a puree after removing the cardamom and kaffir lime leaves .
3 . Add the coconut cream and simmer , check the salt , and remove from heat .
4 . Grill the vegetables and sprinkle salt , crushed black pepper and lemon juice over the top .
5 . Place a ladle of sauce on the plate , followed by the grilled vegetables and then the chicken right on top . Garnish with pink radish and cress .
