Cast Iron BBQ Baked Brownies Recipe

Who doesn ’ t love fresh brownies ? Not only can you bake without heating up your house , but you can have delightful , fudgy , chocolatey , melty brownies for dessert . Make either one large brownie or split the batter into individual portions . Dessert on the grill has never been easier or more delicious .
Serves : 4 Prep time : 20 minutes Cook time : 30 minutes
Ingredients :
• 1 / 2 cup ( 115g ) butter
• 1 / 2 cup ( 113g ) semi-sweet chocolate , chopped
• 1 / 4 cup ( 43g ) dark chocolate , chopped
• 2 tsp ( 2g ) instant espresso powder
• 6 tbsp ( 89ml ) boiling water
• 1 tsp ( 5ml ) vanilla extract
• 2 large eggs
• 2 large egg yolks
• 2 1 / 2 cups ( 500g ) granulated sugar
• 1 3 / 4 cup ( 254g ) all-purpose flour
• 1 tsp ( 6g ) salt
• Extra chocolate for mixing in
• Optional nuts , cherries , caramel , peanut butter chips , marshmallows etc
Method :
1 . Preheat the barbecue to 350 ° F ( 177 ° C ) by lighting all burners to low . You may want to consider the indirect grilling method , but I found that having heat under the cast iron produced a better outcome . If the barbecue becomes too hot , turn off the outside burners leaving the ones under the cast iron frying pan on low .
2 . Bring a pot of water to a simmer and place a heat-proof bowl over top . Dissolve the espresso powder into the water . In the bowl combine the butter , semi-sweet chocolate , dark chocolate and espresso mixture . Stir until melted . Remove from heat and allow it to cool to close to room temperature .
3 . While the chocolate mixture is cooling , sift together the sugar , flour and salt .
4 . Once cool enough that it won ' t cook them , mix the eggs and the vanilla into the chocolate mixture . Fold in the dry ingredients and the extra mix-ins .
5 . Pour the batter into your cast iron frying pan or divide it between the miniature cast iron dessert cookers and bake using indirect heat .
6 . For the full-sized frying pan , bake for 30-35 minutes , until the middle is just set . For the miniature cookers , bake for 20 minutes or until the middle is just set , don ' t overbake .
7 . Remove the brownie ( s ) from the heat and allow to cool enough that you won ' t burn yourself when you eat it because we all know that brownies are best served warm .
TOP TIP :
Top with ice cream , nuts , sprinkles , whipped cream or whatever else makes this dessert the best for sharing !
