Char-Grilled Aubergine Pesto Chicken Skewers

Make barbecue vibes last all year with these summery skewers . Sacla ' Char-Grilled Aubergine Pesto adds a smoky flavour to chicken breast , speared with lime and then on a griddle – or over an open flame , if the weather ' s right .
Ingredients :
• 1 / 2 jar Sacla ’ Char-Grilled Aubergine & Roasted Garlic Pesto
• 4 chicken breasts
• 12 wooden skewers
Method :
1 . Spoon the Char-Grilled Aubergine Pesto into a bowl .
2 . Slice each chicken breast into 3 strips and add them to the pesto .
3 . Stir to cover and leave to marinate in the fridge for at least an hour .
4 . Soak 12 wooden skewers in water ( to stop them burning ).
5 . Remove the chicken from fridge and thread onto skewers .
6 . Finish each skewer with a lime wedge .
7 . Next heat a griddle until it ’ s hot and add the chicken skewers . Cook for 3-5 minutes on each side , until browned and cooked through .
