Ingredients :
• 4 lemons
• 2 large oranges
• 2x 750ml bottles of red wine ( preferably from a Kentish vineyard )
• 2 pints of water
• 16 cloves
• 2 cinnamon sticks
• 4 star anise
• 175g of sugar
• 8 tablespoons of brandy
Method :
1 . Peel the zest , as thin as you can , from two of the lemons and one of the oranges . Thinly slice the remaining orange and one lemon , then quarter the slices and put aside to save for a garnish .
2 . Squeeze the juice from the three remaining lemons and the zested orange .
3 . Pour the wine , water and citrus juices into a large pan and add the cloves , cinnamon sticks and star anise .
4 . Bring to a simmer , then cover and keep just below that heat for one hour .
5 . Stir in the sugar , then strain .
6 . Stir in the brandy just before stirring , add the reserved orange and lemon slices and serve hot .
