HIDE AND FOX CHEF WINS UK S . PELLEGRINO YOUNG CHEF ACADEMY COMPETITION
Marcus Clayton , chef from Alistair Barsby ’ s Michelin-starred Hide and Fox in Saltwood near Hythe , has beaten eight other finalists , rising to the top of thousands of applicants around the world , to win the South East regional final in the Young Chef Academy Competition . He will now go on to represent the UK at the grand finale in Milan next year .
The 26-year-old Rye local , who has worked in professional kitchens since the age of 14 , won over a renowned jury , including Sat Bains and Claude Bosi , with his signature dish , celeriac , apple and mushroom , a dish he ’ s been perfecting over the years and one he chose to put forward to show how delicious vegetables can be .
Commenting on his win Marcus said : " I ’ m delighted to have won , it ' s very surreal and I can ' t wait to represent the UK at the grand final . It ' s been a great experience so far , especially getting direct feedback from the esteemed judging panel . I ’ m looking forward to working closely with Lisa ( Goodwin-Allen ) on my signature dish ahead of the next stage in Milan ."
NEW WINE BAR AND RESTAURANT SÈTE OPENS IN MARGATE
The duo behind Margate ’ s Barletta at the Turner Contemporary gallery and previously of cult spot Barletta on The Roof , Natalia Ribbe and Jackson Berg opened a new wine bar and restaurant last month . Inspired by the wine bars of Paris and southern France , Sète draws inspiration from the rustic country kitchens of Marseille and the bustling wine bars of Paris , offering a welcoming hideaway just off Margate ’ s coastline . Sète ’ s menu – mostly small sharing snacks influenced by French cuisines and dining culture - will feature local ingredients , simply cooked . Operating as a wine bar and shop , Sète ’ s wine list will feature cuvées suitable for every occasion and palette . The wine list , available on tap and by the glass and bottle , will change frequently and provide insight into exciting winemakers . Up to 60 wines will be available by the glass and all bottles will be available to drink at the bar or to take away at lower retail prices . “ At Sète , it ' s all about neighbourhood fun , a relaxed style of service , good wine , tasty snacks and great tunes ,” says Natalia .
POCKET BEER MAP OF CANTERBURY CREATED TO CELEBRATE THE CITY ’ S BEST PUBS
The Canterbury Local Beer Trail map has been launched to champion 17 historic pubs and stylish bars that all sell and champion locally made ales from independent brewers in the city . Inspired by Canterbury ’ s long-standing reputation for offering excellent hospitality to pilgrims and travellers for centuries , the free pocket map has been created by the team at The Foundry Brew Pub to help people discover different parts of the city and brand-new beverages along the way . The beautifully illustrated map showcases the featured pubs as well as selected places to eat and stay . It is sponsored by Canterbury BID and Shepherd Neame ( the oldest brewer in Britain ) and is available to collect from any of the pubs featured on the map , as well as The Beaney Visitor Information Centre .
