Working closely with their fishmonger to ensure their menu echoes the seasons and has been responsibly sourced , the majority of Buoy and Oyster ’ s menu will come straight from one of their 18 day boats which fish the Kentish waters of Margate , Whitstable , Ramsgate , Folkestone and Broadstairs . Buoy and Oyster ’ s trained cocktail bartenders take pride in delivering the same high quality for their cocktails ; using premium spirits , fresh fruit and ingredients , diners can enjoy their favourite cocktail handmade to order , alongside a wide selection of local Kent wines and spirits .
