Step through the large wooden gates to the hidden walled garden , a historical horticultural masterpiece with Grade II Victorian glasshouses dating back to the 1800s , including a melon house , cucumber house , pelargonium house , peach case and vinery , on what was once the Tongswood Estate . A truly idyllic place to dine outdoors , Water Lane is a walled garden with a vinery and a stunning collection of Victorian glasshouses on the Kent and Sussex border . A longterm project over years to come , the site is being sympathetically transformed into a working kitchen garden with vegetable beds , cut flowers , restored vinery , outside spaces and a pavilion for dining and events . Throughout the year , head chef Jed Wrobel leads a kitchen team with a garden-inspired menu .
Harking back to its roots , Water Lane is dedicated to slowly bringing back the garden to its original purpose of growing fruit and vegetables . The produce they harvest is first and foremost destined for their restaurant sitting within the walls . The menu focuses on whatever the current season might be and puts taste and flavour at the forefront of each dish prepared .
