The Ultimate Tex-Mex Oumph Burger
Recipe by : Oumph ! www . oumph . net Serves : 2 Ingredients :
• 1 pack Oumph ! the Classic Burger
• A drizzle of olive oil
• 2 slices of vegan cheese
• 1 / 2 red onion , finely sliced
• 2 tbsp spicy tomato salsa
• 2 seeded vegan burger buns
For the chunky guacamole :
• 1 large avocado , ripe
• 1 tsp chilli flakes
• 1 / 4 tsp sea salt
• 1 / 4 tsp black pepper
• Juice of 1 lemon
• 2 tbsp fresh coriander , finely chopped
For the coleslaw :
• 1 small carrot , finely shredded
• 1 / 8 red cabbage , finely shredded
• 1 / 8 white cabbage finely shredded
• Juice of 1 lemon
• 1 tbsp apple cider vinegar
• 1 tbsp mustard
• 1 small red onion , finely sliced
• 3 tbsp vegan mayonnaise
Method :
1 . Brush your Oumph ! burgers with a little olive oil and grill them on your barbeque or a non-stick frying pan until done .
2 . In the meantime , create the vegan coleslaw by thoroughly mixing all ingredients in a large bowl
3 . Set it in the fridge until you ’ re ready to serve .
4 . Whip up the guac : smash the avocado with the back of a fork , then stir in the rest of the ingredients .
5 . In a small pan , caramelise the red onion slides in a little olive oil .
6 . Assemble your burger ! We ’ ve started from bottom to top : Bottom bun , salsa , guac , 2 burger patties ( go single decker to make 2 burgers per pack ), vegan cheese , coleslaw , guac , caramelised onions , top bun .
7 . Open your mouth wide and dig in !
