James ’ s Whipped Ricotta , Parma Ham , Blood Orange , Cashew Salad
Prep Time : 15 minutes Cook Time : 10 minutes Serves : 2 ( starter ) or 1 ( main course )
Ingredients :
For the ricotta :
• 250g Good quality ricotta
• 100g Cashew nuts
• 2 tbsp Extra virgin olive oil
• 1 tsp White wine vinegar
• 1 tsp Sea salt
• 1 tsp Freshly ground black pepper
• 1 Lemon , zest and juice
For the salad :
• 1 Pack Parma ham
• 3 Blood oranges
• 1 Bulb fennel
• 1 Lime
• 1 Bunch baby carrots
Method :
1 . Put the ricotta , cashew nuts , olive oil , white wine vinegar , sea salt , black pepper , and the zest and juice of a lemon into a food processor and then blitz until smooth .
2 . Next , thinly slice the fennel lengthways as thin as you can then add the zest and juice of a lime and a small pinch of table salt , leave for 5 minutes to macerate .
3 . Peel two blood oranges using a knife and segment .
4 . Lightly chargrill the baby carrots – if you don ’ t have a chargrill gently roast in the oven with a drizzle of olive oil until slightly soft .
5 . Spread the ricotta mix in a circle to create a base , then build all the other ingredients of your salad on top in layers , finally zest the last blood orange over the top of the salad to finish .
