Whether diminutive cakes for smaller gatherings or showstopping tall tiers , the key ingredients for cakes this year will be extravagance with a pinch of inclusivity and dash of sustainability .
For Kate Ampohmah , founder of Eat and Mess in Deal , extravagance is the key word and she has already seen requests for unusual flavours , brighter colour hues and taller tiers . Retro and kitsch-style cakes with growing demand for traditional piping detail alongside more diminutive cakes for smaller celebrations will also be popular according to Nicola Tester , founder of The Cake Witch , Faversham . Small is mighty for larger parties too : ‘ the cupcake trend may be over , however mini cakes offer a popular alternative and look great on dessert tables , as well as offering a greater variety of flavours for guests ,’ adds Kate .
The semi-naked cake trend will be as popular as ever - ‘ decorated simply with fresh flowers or accessorised with pure gold leaf and tiny meringue kisses - each one has its own unique style ,’ says Nicola . Kate adds : ‘ Buttercream or Swiss meringue frosted cakes are still on track to be a popular trend this year with fresh or dried floral decoration , or even palette-knifed and painted effects .’
Wishing to harness a sustainable theme ? ‘ Use pressed flowers to give a beautiful and very effective nature-scape on your cake , making even a small cake look like a centrepiece ,’ advises Nicola .
