January 2022 sees the exciting launch of chef Stuart Gillies ’ new restaurant and bar , Number Eight in the historic market town of Sevenoaks . Co-owned by Stuart and his wife Cecilia ( the power couple behind Chislehurst ’ s acclaimed Bank House ), Stuart has crafted a menu of luxury comforts that herald the very best in-season produce as well as other local artisan suppliers , and is therefore sure to showcase the very best of what Kent has to offer in a deliciously expert way , all year through . We took ten minutes out of Stuart ’ s busy schedule to get the inside knowledge on his cooking , what he has in store for Number Eight and more :
What are you most looking forward to in 2022 with Number Eight ?
Number Eight is a completely new style operation as well as a new team which will develop into something special locally . I want Number Eight to be professional but accessible , whether it be a special occasion or everyday , it will suit all moods .
What do you like most about Kent ?
It ’ s much more personal and family orientated outside of London . Relationships on all fronts are key to being part of the community . Products are local and guests don ' t have far to travel home , so no late-night trains !
What is your main motivation at work ?
I love building teams and inspiring people to respect and enjoy hospitality . It ' s a great industry to work in when you do it well and take care of your team . We provide healthcare , flexible working hours , personal development courses , plus many more benefits . The team ’ s wellbeing and positivity really shines through and connects with our clientele , so making the experience more authentic is key . It ' s OK to have fun at work is the bottom line !
What would you say makes your approach to food unique ?
I ' ve always been an ingredient led chef since my time working with amazing produce in Rome and New York . It ' s not a unique approach as such , but it ’ s very taste and freshness focused to keep the sensation pure . So often , my mantra is ‘ less is more .’
What else makes Number Eight unique ?
Number Eight will be a combination of sensations , from food and drink to music and design . Going out socially is no longer one dimensional , so you need to make sure all the moving parts are of quality , and attention to detail in all areas is critical .
