The Ultimate Vegan Meaty Burger

Ingredients :
• 1 tbsp olive oil
• 4 Future Farm Burgers , each patty formed into 2 thin patties .
• 2 tsp cracked black pepper
• 1 tbsp dried sage
• 1 tbsp dried chilli flakes
• 1 tbsp celery salt
• 1 tbsp paprika
For the sticky BBQ mushrooms :
• 1 tbsp olive oil
• 1 punnet / 250g mixed Asian mushrooms
• 1 tsp sea salt
• 125ml BBQ sauce ( homemade is best !)
For the caramelised onions :
• 1 tbsp olive oil
• 2 red onions , finely sliced
• 2 tbsp balsamic vinegar
• 2 tbsp brown sugar
• 1 tbsp fresh thyme leaves
For the shallot rings :
• 2 shallots , peeled and sliced into fine rings
• 4 tbsp plain flour
• Pinch sea salt
• 250ml vegetable oil , for shallow frying
For the burger sauce :
• 230g vegan mayo
• 3 tbsp ketchup
• 1 tbsp English mustard
• 2 tbsp gherkins , really finely chopped
• 1 / 2 onion , finely chopped
• 1 clove garlic , minced
• 2 tsp Tabasco
For the garnish :
• 4 curly lettuce leaves
• 1 tomato , sliced
• 4 vegan cheese slices
Method :
1 . Season the burger patties with the pepper , sage , chilli flakes , celery salt , and paprika , and set aside .
2 . For the caramelised onions , place a non-stick pan over a medium heat and add a little oil , followed by the finely sliced onions , sauté for 5 minutes . Add the balsamic , sugar and thyme then cook for a further 10 minutes over a low heat until nicely caramelised .
3 . Meanwhile , to make the shallot rings , heat the frying oil in a medium saucepan then put the flour in a bowl and toss the shallot rings in , making sure they ’ re well coated .
4 . Remove the excess flour then , when the oil is hot , carefully drop in the shallot rings . Fry them for 2- 3 minutes or until golden and crisp . Remove them from the oil using a slotted spoon and place them onto a plate lined with kitchen paper – which will soak up any excess oil .
5 . Next place another non-stick pan over a high heat and add a little oil followed by the mixed mushrooms , sauté them for 4-5 minutes before turning the heat down low and stirring in the bbq sauce . When they ’ re caramelised they ’ re ready . Remove them from the pan , ready for when you build the burgers .
6 . When ready to serve , add a little extra oil to the caramelised onion pan and cook the burgers with them . Grill the burgers for a few minutes on each side and , once they ’ re cooked , top with vegan cheese .
7 . To make the burger sauce , simply mix all the ingredients together in a small pan .
8 . Build your burgers , making sure to add plenty of burger sauce , caramelised onions , sticky bbq mushrooms and shallot rings . I garnish mine with lettuce and tomato slices
TOP TIP : Place a lid over the burgers , to help the cheese melt .
