The Small Holding in Kilndown and Bodiam
The Small Holding in Kilndown was described by The Guardian as one of those rural restaurants who do not merely cook you dinner , but also sell you a dream . They ’ re just a group of folk growing amazing things , then pulling them out of the ground , sometimes knobbly and lumpy , then cooking and serving them . ‘ It ’ s perfectly imperfect , and I wouldn ’ t change a thing .’ says Will Devlin , the owner of the idyllic former country pub and Waitroses ’ ‘ Chef to Watch ’ for 2020 . It is the quintessential example of a thriving kitchen garden along with pigs , geese and chickens .
The menu changes on a daily basis , the full menu can be around 10 courses whilst the lunch menu is around 7 courses . The menu is a reflection of the food available in their region from both their farm as well as from local producers . As a standard there will always be a mixture of fish , meat and vegetable dishes . The Michelin Guide describes it as ‘ Rustic British meets Nordic cooking ’ with ‘ bold , well-balanced flavours and lots of personality .’

Water Lane Walled Garden , Hawkhurst
The result of an ongoing restoration project in the hands of new custodians Nick Selby and Ian James , Water Lane is a stunning 15 acre productive walled garden with 650m of vegetable and cut flower beds , 13 Victorian glasshouses for cucumbers , tomatoes and melons , peach case and vinery . A new pop up restaurant , launching this month , is set within the middle of the garden serving a hyper-seasonal menu with homegrown and local Kent and Sussex ingredients cooked on the wood fire oven .
