What is your company story ?
Ainara has worked in the luxury hospitality and events sector since 2003 . She dreamt about opening a high-end venue to create unique hospitality experiences with a personalised service . A place with a relaxing atmosphere , centered around enjoying great food , great drink in the best possible company .
Jokin and Ainara met in London in 2018 and right away started to develop The Gastronomist Club project . Both are delighted to be in Ashford , a dynamic town with a lovely community to be part of .
Where did your inspiration come from ?
We ' ve always been inspired by our origins and culture from the Basque Country where the best quality ingredients are at the heart of any celebration .
Innovation and excellence also apply to the style of cuisine in the Basque Country , which has the highest per capita concentration of Michelin star restaurants in the world .
Tell us about your menu .
We are launching with a tasting menu designed to celebrate hyper-seasonal ingredients from Kent and beyond .
Chef Bello ’ s ambitious and inventive style utilises the finest quality ingredients to produce dishes that are both colourful and filled with dynamic flavours . He excels in experimenting with modern techniques to push the boundaries of guests ’ expectations .
What is your favourite dish and why ?
From our launch tasting menu I really love the Cauliflower Taco . This dish delivers a real surprise of punchy flavours , an exciting way to start a new dinner adventure .
Do you have anything exciting coming up ?
Our menu changes at least once a month so there is always something new to try at The Gastronomist Club .

Our commitment to creating unique and memorable experiences for our patrons extends beyond the dining and wine-pairings .
Our venue was deliberately designed to serve as a blank canvas for art exhibitions , which will change throughout the year . Partnering with Experience Curators for the restaurant ’ s 2021 launch , The Gastronomist has commissioned international fine artist Zita Ayala , marking the UK debut of her work . The “ Taupadak ” exhibition , which in Basque means “ Heartbeat ”, is a brand-new series that sees the artist explore the reconnection between humans and nature .
