Pancakes with Apples , Plums and Ginger Recipe by irinicooks . com

I love fruit and all the ingredients in this quick and effortless ‘ pick me up ’. Perfect for breakfast or an afternoon treat .
Serves : 2 Ingredients :
• 40g almond flour
• 75g buckwheat flour
• 250ml coconut milk
• 25g coconut sugar
• 1 tsp vanilla extract
• 1 tbsp baking powder
To serve :
• 1 large cooking apple , peeled , cored , chopped and cooked slowly in a covered pan over low heat with 1 tbsp water .
• 2 Victoria plums , washed , stoned each cut in 6 pieces cooked in a covered pan with 1 tbsp water .
• 2 pieces of stem ginger , roughly chopped
• Syrup from the stem ginger jar
Method :
1 . In a bowl , mix the flour , coconut sugar , baking powder and salt .
2 . Add the vanilla to the coconut milk , stir and empty into the dry ingredients .
3 . Whisk for a minute to incorporate everything and create a smooth batter . Leave to rest for 5 minutes .
4 . Bring a small frying pan ( approx 15cm diameter ) to a medium heat . Add a few drops of olive oil and pour in half the batter .
5 . Cook over low heat until the surface looks firm and , with the help of a greased lid or large spatula , turn the pancake over and cook again on the other side till crispy and brown .
6 . Eat warm with the fruit on top drizzled with some of the syrup from the stem ginger jar .
Top Tip : If you fear that the cooked fruit will not be sweet enough for you , add a tbsp of coconut sugar when you put it in the pan to cook with the water .
