To fight food waste and boost the local economy Produced in Kent , the trade organisation that supports and promotes local independent food and drink businesses in the county , is sharing helpful tips and advice on how to buy and eat smarter . Recognising that most people are likely to change one thing at a time , the Change One Thing campaign offers simple changes which you can make to have a muchneeded positive impact on the local independent food and drink industry and the environment .
Floortje Hoette , chief executive of Produced in Kent said : “ Produced in Kent wants residents of the county to look at how they can change the way they shop and the way they handle and consume food ... It is through thousands of small changes that a bigger environmental impact will be seen . If everyone commits to Change One Thing this will hugely benefit the county , its beautiful countryside , and its residents .”
Change One Thing Suggestions ...
1 . Buy , eat , cook seasonal – reduce your food bill , lower your food miles , and enjoy better quality produce .
2 . Shop local for life – if every Kent resident spent £ 10 in local produce and products it would put £ 415 million back into the local economy !
3 . Buy and eat smarter – UK households waste 6.5 million tonnes of food a year . Buy what you need , eat before expiry , cook the right portions and reduce waste and your waistline too !
4 . Love your leftovers – A family of 4 can save £ 60 a month by throwing away less food . Have leftovers the next day , freeze it , ( safely ) give to a friend or neighbour and compost the scraps !
5 . Spice up your life – You can still go on a global food journey using local produce or use locally made sauces to help you get creative without the need to cook from scratch .

Saltwood ’ s acclaimed Hide and Fox , has been awarded the prestigious Michelin Star at the Michelin Awards 2021 . The feat , even more impressive as it came within its first year of opening and during the pandemic , recognises the culinary brilliance of the stylish neighbourhood restaurant run by chef Allister Barby and partner , sommelier Alice Bussi . Featuring only the best ingredients , the seasonal menu showcases the best of Kent with refined , delicate dishes , all set in a beautiful , relaxed dining area that pays tribute to the building ' s former life as a village shop , with its original wooden shelves now repurposed as an impressive fine wine cellar . Diners can expect only elegance , precision and skilful cuisine , and the star is so well deserved for the team .
Hide & Fox join a growing band of renowned Kentish dining institutions with Stark , The Fordwich Arms and The Sportsman all retaining their respective Stars .

The Kentish Hare , Bidborough was awarded the Bib Gourmand , joining the ranks of the Swan Wine Kitchen ,
Ayra and The Compasses Inn . Adding to its two AA Rosettes , the Tanner brothers ’ gastro bolt-hole was recognised for its commitment to quality and value , demonstrated in its menu that offers locally-sourced , bold and flavoursome dishes .
Alongside the existing awards a new Green Star was introduced for 2021 . Awarded to restaurants for sustainable gastronomy . The accolade recognises practices who have acted as role models in industry , holding themselves accountable for both ethical and environmental standards – working directly with local producers and reducing their plastic waste .
One of the 23 restaurants to receive the award is seafood bistro , Angela ’ s in Margate , with The Guide recognising that “ their ethos is fiercely local and sustainable .. even the tables are made of compressed recycled plastic ”; and Will Devlin ’ s The Small Holding , a farm and kitchen in the small village of Kilndown that offers a menu that showcases the unique connection between farm and table , bringing a whole new meaning to selfsufficiency .
