Strawberry Flan

Serves: 6 Prep time: 15 minutes
Ingredients:
• 1 ready-made sponge flan case
• 250g cream cheese or mascarpone
• 2 tbsp icing sugar
• 2 punnets of strawberries
• 2 tbsp caster sugar for coulis
• Icing sugar to dust
• Clotted cream( optional)
• Sprig of mint
Method:
1. Using a hand blender, blend half a punnet of strawberries with the caster sugar to create a strawberry coulis and set aside. Add the sugar one spoon at a time and taste as you go as some strawberries will be sweeter than others.
2. Using a hand blender with the balloon whisk attachment, mix the icing sugar into the cream cheese.
3. Spread the cream cheese mix evenly over the base of the flan case, bringing the mix up to the sides.
4. Halve the remaining strawberries and arrange flat-side down on the flan base until completely covered.
5. Pour the coulis over the flan ensuring all strawberries are covered.
6. Place in the fridge to chill.
7. Dust with icing sugar before serving with a dollop of fresh clotted cream and a sprig of fresh mint leaves. Enjoy!
TOP TIP: Mix it up with a variety of fresh berries- blueberries and raspberries are a delicious summer addition.
