Grilled chicken with sassy citrus salsa

My own children were always fans of this dish. The salsa is easy to prepare the night before so when you get home, you just need to grill( or air fry, as I did) the chicken and serve it with the salsa. I always felt pretty sassy when I made this because it felt like I was serving something extra special when in reality it was super easy. I just wish I had known about Bob Evans mashed potatoes when my kids were little. Those would have been a go-to side dish on regular rotation!

Grilled chicken with sassy citrus salsa is a perfect dish for warm evenings.
Ingredients:
2 cans( 11 ounces each) mandarin orange segments, drained, coarsely chopped ½ cup finely chopped red pepper 1 / 3 cup finely chopped red onion ¼ cup Grey Poupon mustard 1 tablespoon lime juice 1 tablespoon chopped fresh cilantro 6 boneless skinless chicken breasts
Instructions:
Mix orange segments, peppers, onion, mustard, lime juice and cilantro; cover and let chill for several hours or overnight so flavors meld.
Grill, broil or air fry chicken breasts with your favorite seasonings until cooked through.
Serve chicken breasts with prepared salsa.
