With brand spanking new Head Chief and management, Sands is quickly becoming Playa de Bossa’s most delicious beach restaurant. We speak to new Head Chief Tim Payne to discover it’s secrets for 2013.
OK, I haven't been to Sands Ibiza yet. What can I expect?
Sands tries to give an authentic Ibizencan beach experience. We have a very chilled out and relaxed environment in Playa d’en Bossa infamous beach stretch with great music throughout the day to accompany a menu using as many ingredients as possible that we can source locally right here on the island. The service is informal and friendly yet professional and attentive, our guests tend to come and then spend the whole day with us. We generally close as the beach empties around 8pm, however, if we have a party or event we carry on until midnight. chicken breast, bacon, egg mayonnaise and salad, accompanied by one of our excellent bloody Mary’s whilst the warmth of the sun brings you back to life.....this would make an excellent brunch.

Sands specializes in food and great atmosphere, are you popular for your cocktails?
Sands takes its cocktails, in fact, all its drink offering very seriously. The General Manager, Pedro, spent many years working in some of London’s best bars and restaurants and he is very passionate about spirits and wines. The Head Bartender, Salvatore D’Amico also spent several years working in some great places in London and has put together a very original cocktail list using lots of fresh fruits and herbs resulting in very refreshing drinks great for the beach.
You are famous for using fresh ingredients and produce from the Island. What kind of cuisine can we expect in July and throughout the summer?
Mediterranean with a few influences from Spain, France and a little bit of Britain, using as much locally sourced produce as possible.
What is the daytime vibe and does it change at night?
We stay open until midnight when we do parties or events. The atmosphere changes as in the day we have a wide-open space with great views of the sea and beach. At night the view disappears as the beach is not lit and the atmosphere becomes more intimate with a low level lighting.
What is your favourite dish you would recommend for brunch?
This is a difficult one! I guess as you mentioned brunch, I’d go for our classic club sandwich that is beginning to get a reputation of its own. Locally sourced sour bread, lightly toasted and filled with 200 grams of free range
What are the biggest events happening in Sands during July and August?
The biggest will be Carl Cox’s birthday on the 18th of July without a doubt. We also have the likes of Boy George
