Ingredients

1 cup butter

1 cup brown sugar

½ cup white sugar

2 eggs

1 tsp vanilla

½ tsp almond flavouring

3 ¼ cup flour

Instructions

* Cream butter and sugars.

* Beat in eggs and flavor extracts.

* Stir in flour.

* Leave in dough in fridge for 1-2 hours (Sometimes *when in a rush, I skip this step and it still works fine).

* Roll into small balls.

* Press in iron until lightly golden color (Depending on the heat of your iron, this only take 30-60 se conds).

*Shape immediately into cone, bowl, roll, or lay flat (Be careful, they are HOT fresh off the press!).

* Let cool completely before storing in an airtight container.

Traditional Dutch New Year's Cookie

In the Netherlands they are traditionally a New Year’s cookie. Apparently the literal translation is “little pinchies.” You need a press. They are not easy to find, and while an Italian pizzelle press works, the grooves are too deep. Find a Norwegian Krumkake press that has a flatter design. Or a completely flat press like you would use for pancakes can work too. They press from 30-60 seconds until golden brown.
