I went to a Danish wedding once and these cookies were piled high on beautiful plates, everyone was loving them.
I found this tried and true recipe enjoy!
Ingredients
• 1cup all-purpose flour
• 2tablespoons all-purpose flour
• 1 ⁄ 8 teaspoon ground cinnamon
• 1 ⁄ 2 cup butter, softened
• 1 ⁄ 2 cup pecans, finely chopped
• 1 ⁄ 2 cup powdered sugar, sifted, divided
• 1 ⁄ 2 teaspoon vanilla extract
• pink food coloring
• powdered sugar
Directions
1. Combine flour and cinnamon in a large bowl.
2. Add butter, pecans, 1/4 cup powdered sugar, and vanilla, stir well until blended. Add a few drops of the pink food coloring. Batter will be stiff.
3. Shape dough into 1inch balls. Place on ungreased cookie sheets.
4. Bake at 400º degrees for 10-12 minutes.
5. Remove cookies to wire racks to cool slightly.
6. Roll cookies in powdered sugar, and cool completely on wire rack.
