CANADIAN OMELET

Ingredients

1 sheet Puff Pastry, thawed

5 eggs plus 3 egg yolks

9 slices Canadian Bacon

1 tbsp chives

1/8 cup Colby/jack cheese (optional)

1 1/2 tsp Dijon mustard

1 tsp lemon juice

dash Cayenne pepper

3 tbsp butter, melted

Directions

Preheat oven to 400F.

Lay out thawed puff pastry, close seams in folds if needed. Sprinkle chives and cheese (optional) evenly over pastry. Arrange Canadian bacon evenly over pastry.

Mix 5 eggs well and scramble over medium heat until almost set. While eggs are cooking, mix mustard, lemon juice and pepper, add egg yolks and stir until well blended. While stirring egg yolk mixture, drizzle melted butter and stir until well blended. Pour into scrambled eggs and mix well.

Arrange cooked egg mixture evenly over Canadian bacon. Roll pastry, starting with short side, into log shape. Cut into 8 slices and arrange evenly (seam side of log down) on cookie sheet. Bake 20 minutes, or until pastry is golden brown. Serve hot. (One serving equals 2 slices.)
