Ingredients:

2 cups of water

7/8 cup butter

1 tsp of salt

2 tsp of sugar

3 cups of pastry flour

8-9 eggs

4 oz grated gruyere cheese

Instructions:

• Put water in pan

• Add sugar and salt

• Add butter, mix with spoon and bring to a boil

• Take boiling mixture off stove and add the pastry flour, mixing with spoon (must be pastry flour, others wouldn’t have enough gluten)

• Put back on stove on high flame and fold mixture until it looks like thick mashed potato

Gruyere Cheese Gougère Otherwise known as

cheese puffs.

• Put mixture in mixing bowl and use the paddle attachment put on low speed (3 minutes)

• Add eggs one at a time on medium speed

• Stop mixer halfway and mix with spatula, and when all the eggs have been added, mix again with spatula

• Add cheese and mix

• Use scoop to put on lined sheet pan in individual scoops

• Bake at 400 degrees for 35-40 minutes – you will enjoy these wonderful cheese puffs!
