SPRING RESET IN A BOWL

A fresh, feel-good grain bowl that brings colour, crunch, and citrus to your table.
INGREDIENTS
Serves: 2 to 4
1 cup quinoa, cooked 1 large sweet potato, roasted 1 cup corn( grilled or fresh) 1 cup shredded red cabbage 2 cups baby greens or arugula ½ cup feta cheese ¼ cup pumpkin seeds 1 avocado, sliced( optional)
1 small cucumber or a few radishes, thinly sliced
fresh cilantro and mint 1 lime, cut into wedges

DIRECTIONS
1. Cook the quinoa
Prepare the quinoa according to package directions. Once cooked, fluff it with a fork and let it cool slightly so it stays light and separate.
2. Roast the sweet potato
Peel and dice the sweet potato into bite-sized cubes. Spread on a baking sheet, drizzle lightly with oil, and roast at 400 ° F until tender and lightly caramelized, about 25 to 30 minutes, turning once halfway through.
3. Prepare the fresh ingredients
While the sweet potato roasts, shred the red cabbage, slice the avocado, and thinly slice the cucumber or radishes if using. Wash and dry the baby greens or arugula, and roughly chop the fresh herbs.
4. Cook or warm the corn
If using fresh corn, grill or sauté it briefly until just tender. If using frozen or canned corn, warm it through and let any excess moisture drain off.
5. Build the bowl
Spoon the cooked quinoa into the base of a large shallow serving bowl or divide it among individual bowls. Arrange the roasted sweet potato, corn, cabbage, greens, and any extra vegetables in sections over top for a colourful, composed look.
6. Add the toppings
Sprinkle the feta and pumpkin seeds over the bowl, then tuck in the avocado slices and scatter over the fresh herbs.
7. Finish and serve
