We asked what it is that makes these dinners so special. Here’s what Executive Chef Scott Croyle had to say. What is your favorite part of hosting Jacksons’ pairing dinners? As a chef, you don’t always get to interact with diners. My favorite part of the pairing dinners is being able to educate guests and engage with them outside of the kitchen. I love to prepare food table side and really give them an experience to remember. What do you want guests take away from their experience? My goal is to help people better understand their personal tastes. By really tuning in to the flavors of the food and the drink pairings, guests can learn more about what they like, and why they like it. Whiskey Pairing Dinner $75++ per person March 10th, 6:00 pm 1st Course – Irish Coddle Soup with smoked sausage, bacon, cabbage and potatoes. Cocktail Pairing: The Liberty Pole Emerald. 2nd Course – Dublin Lawyer featuring shrimp and lobster sautéed table side in a heavy whiskey cream and served in a puff pastry. Cocktail pairing: Rock and Rye. 3rd Course – Corned beef and apple hash over a potato pancake. Cocktail Pairing: William McClure’s Apple. 4th Course – Porter beef with colcannon. Filet mignon medallions sautéed with button mushrooms, pearl onions and porter gravy. Cocktail pairing: Merciful Heaven. 5th Course – A Liberty Pole bourbon cream Guinness float.
