Alas, it’s time to get our grills up and running. For most of
us, the ritual marks the beginning of easier, healthier living. But
before you drop that juicy steak and side of veggies on
the grill, there are crucial steps you must take now to
get your grill and equipment in tip-top shape. Food just
doesn’t taste the way it should when it’s cooked in the

taking inventory of what you use on a regular basis and upgrade to
ergonomic peelers, high-heat spatulas, and of course, make sure you
have the essentials like a set of oversized stainless mixing bowls.

Chef’s Tip: To help keep your grill racks clean, spray your clean racks
with non-stick spray or rub with cooking oil, and apply barbeque
sauce on your meat only when it’s nearly done. Now that your
equipment is ready, explore marinades and rubs for added flavor and
moisture.
Grilling Fish
Get your grill extra hot to ensure that your fish doesn’t stick.
Turn the heat down slightly just prior to adding the fish to prevent
charring or flaming. For extra insurance, put a few thin slices of lemon
on your grill grate and place the fish on top. You will sacrifice some of
the grill marks on your fish, but maintain the great grilled flavor with
the added kick of some fresh lemon.
