One standout is his signature sauce, a recipe he’ s carried in his wallet for more than a decade— a whipped blend of mayo, BBQ sauce, chipotle, and Heinz 57. You’ ll find it featured on dishes like the Erne Slider( made with a choice of three crispy chicken strips, pulled pork, or cheeseburger on a brioche roll) and served alongside crispy LevelUp Tots, which are quickly becoming a house favorite.
Braeudigam also credits Kinder’ s Woodfired Garlic seasoning as his goto ingredient, sprinkled thoughtfully throughout the menu. Flatbreads, pulled pork sandwiches smoked on-site, and comfort-forward dishes reflect his balance of creativity and familiarity.
LevelUp dining isn’ t just about the main restaurant. Upstairs, the facility includes a brand-new ballroom, seating up to 250 guests and featuring wraparound windows, a private deck, and golden-hour sunset views.
“ The space is fully outfitted with its own bar and our on-site catering team,” says Bridgette Millar, catering manager at LevelUp Pickleball Club.“ We can do anything a client requests because we love celebrating food, local businesses, and people sharing moments together.”
The beverage program mirrors that same intentionality. Guests can choose from a wide selection of beers, seltzers, cocktails, and an ever-growing list of non-alcoholic options. Baseline proudly partners with Wigle Distillery and Big Spring Spirits, emphasizing local collaboration and community support.
While Baseline offers a menu with QR-code ordering, Braeudigam made a deliberate decision to keep servers and bartenders front and center.
Erne Sliders and Tots
Baseline Bar & Grille’ s full-service bar has seven screens for a multiple-viewing sports experience.
“ We want that human interaction,” he explains.“ That welcoming feeling— that’ s what we’ re good at.”
Cleanliness, food safety, and consistency are non-negotiables as well, but for Braeudigam, hospitality is what keeps guests returning.
“ I go out of my way to make sure small things don’ t turn into big things,” he says.“ We want people to feel comfortable and cared for.”
Named“ Baseline” as a nod to pickleball and the surrounding sports community, the restaurant acknowledges its roots while carving out a distinct identity. Even if Braeudigam admits he knew little about the sport at first, he quickly embraced it.“ I know when my wife Stefanie and I bring our little ones here to learn pickleball, they’ ll try their hearts out,” he laughs.
