To brew beer, you start with malted barley and mash them in with hot water to make a raw beer that has an oatmeal-like consistency called wort. Then you drain it off and put it in a brewing kettle along with hops to add flavor, aroma and bitterness.
After boiling, the brewmaster adds yeast. After a couple of weeks, the yeast consumes the sugar and then beer is ready to be carbonated, bottled and ultimately enjoyed.
Morris says the yeast is the critical factor. Different yeast will give different flavors. For example, there are German, Irish and Belgian flavored yeasts, or neutral yeast that has no flavor.
“ The secret is being consistent and following everything step by step,” he adds.

“ Everyone in Erie, including myself, likes to be outside in the summer. It’ s nice to have something to eat and drink and to be outside,” says Morris, who plans to have live entertainment, cornhole and an Oktoberfest in the beer garden. n
