From being a professional photographer, to helping run an HIV awareness project in Namibia, to most recently being the manager of First Commonwealth Bank in Gibsonia for the past seven years. Through all of his life’s endeavors, however, his passion has always been food and he’s devoted himself full time to that love with Just in Thyme Catering & Events, Inc. “My wife and I often talked about doing something small, on the side or in retirement in the catering field,” Harrison said. “My partner, John Vallese, was the caterer at our wedding, our first daughter’s baptism and my wife’s 40th birthday party. He was in Punxsutawney looking to get back to Pittsburgh and I was looking for a change from banking. The time was right and my wife and I decided there would never be a better opportunity to jump in than now.” Justin and John found an events venue and named it the Evergreen Room. Just over the Hampton border in Richland, their facility, complete with commercial kitchen, space for up to 80 people and a smart board for corporate events, allows John to run wild with his more than 20 years of catering experience. “People rave about our Parmesan Crusted Chicken, which is finished with lemons, capers, tomato concasse and white wine sauce, but we don’t have a preset menu,” Justin said. “We encourage our clients to tell us what they like and we tell that story through food. For our wedding clients, it might be a rehearsal dinner with a meal based on what they had on their first date, or the first time he cooked for her or she for him. Same for a funeral. If the deceased loved meatloaf and mashed potatoes, let’s celebrate that person’s memory by serving up their favorite dish.” In addition to catering, Just In Thyme can handle your entire event from start to finish, making them a one-stop-shop for any celebration. They have no minimum party size - so a romantic dinner for two at home is always an option - and they routinely handle events of 250 guests. “Beyond 250 guests, we have the ability to ramp up our staff quickly and handle whatever the event needs,” Harrison said. “We can also plan the event from start to finish, including arrangements for flowers, live music, karaoke, photography, videography, and more. We can really take a lot off of people’s plates when it comes to event planning, so they have more freedom to actually enjoy the event.” Just In Thyme will travel to any location within an hour of Pittsburgh and farther upon special arrangement, so long as necessary facilities are available for catering functions.
