Guinness braised beef short ribs on polenta

OK , I can tell you right off the bat that if you take the time to make this dish , you will be so happy . Well , that ’ s assuming you appreciate a deeply rich beefy “ fall off the bone ” experience which literally warms your culinary and spiritual soul . Unfortunately , the short rib can be hard to find , so you will need to call your butcher to see if they carry them or if they can cut them . They originate from the underside of the ribs , near the brisket . They are a cut that needs to be cooked or braised for two to three hours to get them nice and tender . But the flavor is rich , beefy , and worth the effort . Let ’ s get started .

Ingredients
4 to 5 lbs of short ribs 6 to 7 strips of bacon 2 cups of flour 1 large onion , chopped
3 to 4 stalks of celery - chopped 4 to 5 cloves of garlic - chopped 3 to 4 cups of beef broth 1 ½ bottles of Guinness beer ( you can sip on the other half ) Salt and pepper Olive oil 1 can of diced tomatoes ( optional ) 1 ½ Tbs of tomato paste Fresh thyme , rosemary and parsley
