Lemon Butter
Garlic Shrimp Pasta

Ingredients
400 gms rice pasta (spaghetti)
2 tbsps olive oil
5 cloves grated garlic
¼ small diced sweet pepper
1 lb fresh shrimp
2 tsps oregano
1 bag baby spinach
2 tbsps butter (not margarine)
¼ lemon
3 tbsps grated cheese (low calorie)
Salt and Pepper to taste
Parsley for garnish
For a healthier version, shrimp can be
swapped for 2 seasoned chicken brea
1 stick butter
Directions
Boil pasta, drain and set aside.
Heat olive oil in pan and add garlic and sweet
peppers. Let cook until tender, add shrimp
and organo and season to taste.
Add baby spinach and cook until wilted. Add
pasta, butter and cheese and stir well.
Squeeze lemon juice and turn off heat. Top
with parsley and serve hot.
