Fruit - Rhubarb

ingredients
500g fresh rhubarb
140g white sugar
2 vanilla pods
method
1 Preheat the oven to 200c.
2 Trim the ends of each piece of fruit and cut in half if very long. Place all the fruit in a roasting tin and top with the sugar.
3 Run a knife through the centre of the vanilla pods and place on top of the sugar.
4 Cover the tin with foil and
seal well. Place in the oven
and cook for 20 minutes.
5 Remove from the oven
but leave the foil in place
for 10 minutes. Serve
hot or cool and eat
later.
