They ’ re like family and friends .” Lindo Mexico provides a family-like atmosphere , whether you ’ re a regular visitor or first-time customer .
It ’ s grown to become one of the most popular breakfast spots for local police officers , which have become a morning fixture at the restaurant , with swarms of families and church groups pouring through the doors on the weekends .
“ It ’ s nice ,” Jasmin added . “ I like how the people are . There aren ’ t a lot of problems here , and the police officers take care of us .”
Tex-Mex classics such as quesadillas and fajitas are among the best-selling items on the menu , but there are also a plethora of more traditional Mexican dishes to choose from . Among these is menudo , a beef tripe-based soup that blends perfectly with the colder winter weather on the way .
Food has always been a passion for Jasmin , who moved to the United States from Honduras in 2002 .
She met her husband while working at his brother-in-law ’ s restaurant in Houston — she was a waitress , he was a cook . The couple moved to Huntsville in 2008 , and opened Lindo Mexico the same year .
They have since expanded , opening El Tapatio locations in Huntsville and Willis . There are also plans to open a third restaurant in town , just a few blocks away from Lindo Mexico , “ in the next year or so .”
Like countless restaurants , Lindo Mexico has been forced to adapt amid the COVID-19 pandemic . However , by offering special deals and embracing take-out and drive-thru options , they ’ ve managed to make the most of the situation .
“ A lot of people have still been coming for to-go and drive-thru ,” Jasmin added , “ so instead of ( sales ) going down , I think they ’ ve gone up .”
