To season the chicken you’ll need:

- Paprika (2 tsp)

- Cayenne pepper (1 tsp)

- Garlic powder (1 tsp)

- Dried oregano (1 tsp)

- Dried thyme (1 tsp)

- Salt (1 tsp)

Preparation:

Step 1: In a small bowl mix all of the seasoning ingredients. reserve 1 ½ teaspoons of the seasoning, set aside.

Step 2: Coat both sides of the chicken breasts with the seasoning mixture.

Step 3: In an oiled cast-iron skillet, cook chicken on a medium-high heat, until chicken is cooked. Cut chicken into pieces.

Step 4: In a large bowl, add your greens, tomatoes, avocado, red onion and chicken. Add dressing and toss.

For dinner we have Penne with tomato sauce pasta

You’ll need:

Olive oil (2 tbsp)

Onion (½)

Red chili flakes (½ tsp)

Garlic, minced (1 clove)

1 can of crushed tomato (395 g)

Salt, to taste

Penne pasta 225 g

Preparation:

Step 1: Heat a large saucepan over medium heat. Add the olive oil and onion, cook until the onion is translucent, 8 to 10 minutes.

Step 2: Add the chili flakes and garlic, cook for another 2 minutes. Add tomatoes and simmer, uncovered for 20 minutes.

Step 3: Bring a large pot of water, salted, to a boil, cook the pasta according to package instructions. Save ½ cup of pasta water, then drain.

Step 4: Add the drained pasta to the sauce. Stir, adding pasta water if needed to loosen the sauce. Season with salt to taste.
