Local market positioning : Scarlett Wine Bar & Restaurant is the only rooftop bar in the Silom area with a panoramic view of the Bangkok skyline . The restaurant is renowned for Frenchinspired cuisine at an attractive price . The wine list includes more than 250 labels from around the world .
What ’ s been tweaked since opening : We have introduced special weekly and monthly promotions , which often highlight a particular ingredient or regional cuisine such as French cheeses , premium dry-aged meats , oysters , truffles and more .
Most successful promotion : We regularly welcome special guest chefs , including Michelin-starred chefs and celebrity chefs for special culinary events and promotions , as well as daily promotions such as happy hour .
Biggest operational challenges : Maintaining consistency , which we overcome by tracking data and following up . HR practices need to be involved to reduce labor cost , and that includes flexible scheduling for staff members , weekly training so they are motivated , and setting targeted monthly goals for them to achieve . Apart from this , of course , it is to maintain the quality of the food . We always ask for direct feedback from guests by checking satisfaction on spot . All of our staff members are trained to get the guest ’ s satisfaction and feedback . It allows us to build a healthy relationship with our customers , and to value our staffs better and reward them on the basis of individual feedback , which will keep our team strong and motivated .
Future plans : We will stay true to our DNA with Scarlett ’ s concept and soul of authentic French cuisine at an attractive price .

Advice for hoteliers : Hoteliers should set their F & B concepts as standalone restaurants more . Also , running an interesting marketing campaign is a plus to catch and create buzz among the crowd , but it is as well to maintain professional service from the inside out .
