BUSINESS CASUAL “ It ’ s about atmosphere ,” says Philipe Perd , chief project development officer for the Oetker Collection , whose luxury hotels are in six countries . “ More and more of my guests don ’ t have to wear a tie to work , so they want a casual atmosphere when they go out to dinner .” At Palácio Tangará , the company ’ s newest property in São Paulo , restaurant Tangará Jean-Georges features dark wood tabletops with gray placemats instead of white linens . “ The emphasis is really on social dining instead of formality ,” Perd says . Tables also feature a wood centerpiece and monochromatic touches like unpolished earthenware vases and simple white candleholders .

BACK TO NATURE “ We are bringing back the iconic idea of friends and family having a familystyle meal ,” says Coni Thornburg , general manager at Calistoga Ranch , a luxury property in California that is part of Auberge Resorts . The Lakehouse restaurant sits on Lake Lommel and features a long banquette , warm wood paneling , a fireplace and a communal table to encourage guests to interact . The tables play up the scenery with warm wood tones and centerpieces made of logs and thick branches . “ This is a timeless and traditional style of celebrating the act of sharing a meal ,” Thornburg says .
