THE LUXURY OF SIMPLICITY At Mar Adentro in Los Cabos , Mexico , the dining room incorporates design elements that bring the beach inside . The cream-colored dining room ’ s “ fourth wall ” is open , allowing guests to look out onto the pool and ocean . Fernanda Ibarra , sales director at Mar Adentro , says the light-toned ceramic plateware , minimalist table settings and clean lines adds up to a barefoot luxury that helps remind guests that they ’ re on vacation . “ We want to give them that atmosphere on top of first-class service and super-quality food ,” he says . “ We want to provide spaces that evoke sumptuous austerity and a seamlessly well-rounded environment .” Brown , green and cream ceramic tableware tops the marble tables and adds to the simplicity .
CLEAR THE CLUTTER “ The consumer is more sophisticated and knowledgeable , and they want the high-end experience without tuxedos ,” says Alex Taylor , vice president of restaurants and bars for Kimpton Hotels & Restaurants . At Boleo , a rooftop bar atop the Kimpton Gray hotel in Chicago , place settings have a knife and a fork , a folded napkin and a vintage rocks glass for water – no multiple courses of flatware or crystal stemware . The idea is to make guests feel relaxed as soon as they sit at their table . “ A clean , bright design and a space where you feel like you can let your hair down is the best luxury ,” Taylor says .
