Proof at Four
Seasons Resort Scottsdale at Troon North serves nostalgic American fare .
Good food need not be a stuffy affair , as many hotels move away from formal settings to make fine dining fun .
Early this year Four Seasons Hotel Chicago introduced Allium , a restaurant committed to seasonal , local cuisine as well as fun fare like a house-made Chicago-style hot dog .
Also focused on fun is Four Seasons Resort Scottsdale at Troon North in Arizona , which was set to debut Proof , an American canteen , at press time . Envisioned as a casual neighborhood hangout , the space evokes the Wild West . Menu items are inspired by the 50 U . S . states , with offerings including fried green tomatoes , chicken and waffles and oldfashioned milkshakes . “ This is not a special-occasion place where you have to wonder what to wear ,” says Director of Food & Beverage Bryan Feigenbaum .

MINIBAR : MAXIMUM VARIETY

No longer a wasteland of stale potato chips and tiny bottles of cheap liquor , many minibars are sporting new looks . This past spring , Soho House New York debuted its Mini Bar Collection , which promises unexpected goodies stylishly arranged on a custom-built credenza . Although the collection ’ s showpiece is the bar — featuring 375-ml bottles of premium vodka , rum and more — the snacks aren ’ t too shabby , either . Soho House Manager O ’ Neiell Espinal claims to have tasted every item — including 10 different types of chocolate — before choosing locally made confections from Jacques Torres along with other area favorites .
Hotel deLuxe in Portland , Oregon , also focuses on locally sourced items in its minibars — with a twist . The hotel ’ s honor bar pairing menu offers a fun guide to the selection ’ s optimal combinations . A half bottle of Oregon pinot noir , for instance , marries well

with gourmet beef jerky ( US $ 25 ). Other options include beer with Pacific Northwest-made Beecher ’ s cheese crackers ( US $ 11 ).
“ Portland is such a food-obsessed city , and guests come here seeking to really experience all things culinary ,” explains Bashar Wali , president of Provenance Hotels , owner and operator of Hotel deLuxe . “ The program is new , so we don ’ t have hard data on revenue generation , but our guests seem to think it is fun and clever .”
