KAEMA SUTRA , SHANGRI-LA HOTEL COLOMBO , SRI LANKA One of the six F & B spaces at the Shangri-La didn ’ t so much re-concept as it did lure an existing one . Kaema Sutra had opened in 2014 in a shopping arcade , but it took its elevated Sri Lankan , seafood-focused cuisine and its high-profile chef , Dharshan Munidasa , to the hotel , where it debuted in November along with the hotel . “ Sri Lanka is in the very early stage of the restaurant dining scene ,” Munidasa says , adding , “ I am very much alone in this category .” It ’ s too early to peg its local-toguest ratio , but Munidasa says he is aiming for 100 customers per day , seven days a week . The interior , which features elephant sculptures and carved wooden masks , has a bar , new tabletop and table arrangements , all overlooking the Indian Ocean .
