The beachside venue ’ s new “ surfer mentality ” blends Latin and Asian cuisines , born of “ listening to the locals ... and giving them a place that they can be at home in .”

Curadero , Kimpton Hotel Palomar San Diego : Formerly a gastrolounge called Saltbox , Curadero focuses on Mexican street food with a laid-back and edgy vibe , aimed squarely at locals – “ what they ’ re into , how they like to eat , how they spend their days ,” Bortnick says . An upstairs room has a food-truck style taco window .
3 . Outlier , Kimpton Hotel Monaco Seattle : Previously Sazarac , which had a 20-year run in the space , Outlier fits Seattle ’ s progressive market , Bortnick says . Small plates , modern menu and an interior that speaks to the city ’ s grunge history . The name pays homage to “ that unique individualistic ideal that native Seattle people have .” ( Note : All three spaces opened in 2017 .)
