Even as many hotel restaurants move away from tablecloths and runners , those table linens are still firmly entrenched in most meetings and events programs .
Daniel Erickson , banquet director at Four Seasons Resort Scottsdale at Troon North in Scottsdale , Arizona , notes that although the property ’ s signature steakhouse , Talavera , does not use tablecloths , the resort employs 100 % cotton sand damask tablecloths for banquets in addition to custom runners and velour dropovers for meetings . “ It is always important to match linen to the type of event ,” Erickson adds . “ Our house linens in the banquet department are a blank canvas , which can be enhanced with runners , napkins and florals . Another thing we have seen are less formal linens , such as burlap , incorporated into events like farmer ’ s markets .”
The use of color in the event space is up for debate . Todd Kelly , executive chef and food and beverage director at Hilton Cincinnati Netherland Plaza in Cincinnati , Ohio , for one , says he believes colored linens are a thing of the past . “ We tend to use more simple shades of white and grey with metallic accents ,” Kelly adds .
Yet Erickson says especially with weddings , there is a move to follow fashion trends with colored linens . “ Some companies follow the Pantone color chart trends for the coming season to guide what is hot ,” he says .
