Four Seasons is finding hotels where it make sense to shift from the brand ’ s traditionally classic approach to something trendier . At Allium , the new restaurant at Four Seasons Hotel Chicago , an approachable environment and farm-to-table , regional American cuisine rule the day .
BraytonHughes , San Francisco , created a relaxed design aesthetic with fun details like a cheetah-print sofa in front of a marble fireplace .
Vegetables — from local farmers and the hotel ’ s rooftop garden — drive Allium ’ s menu , while a “ From the Meat Locker ” section features steaks and chops from Midwestern ranchers . Small , sustainable , American producers also dominate the beer , wine and cocktail lists .
“ Allium is the natural evolution of a cuisine we have been cultivating for the last five years ,” says Executive Chef Kevin Hickey . “ Our menu allows guests to create their own experience by sampling a variety of snacks and sharable dishes , or ordering a larger entrée or premium cut of meat .”

HYDE and SLEEK

The Hyde nightlife brand from Los Angeles-based sbe has debuted in Las Vegas with Hyde Bellagio . The 10,000-sq-ft ( 929-sqm ) indoor / outdoor venue overlooks the famous Fountains of Bellagio .

Beachfront retreat

Anantara has debuted in Vietnam with the opening of Anantara Mui Ne Resort & Spa . Located along the country ’ s southeast coast 123 mi ( 198 km ) northeast of Ho Chi Minh City , the resort promises an ideal beach climate in addition to Vietnamese heritage .
Its 89 rooms , suites and villas — set among tropical landscaping with views of gardens , the pool , a fresh water lagoon or the sea — were designed to reflect traditional Vietnamese style . Six villa types include the two-story Anantara Two Bedroom Beach Front Pool Villa with a master bedroom on each floor and 1,378 sq ft ( 128 sq m ) of living space .
Highlights of the property ’ s five restaurants and bars include freshly grilled seafood and a signature cocktail served in a local Cham pottery mug . Anantara Spa ’ s menu , meanwhile , is inspired by lotus flowers , and treatments harness the nourishment of coconuts .
Design highlights include a terrace with views of the fountains and an outdoor bar . The grand salon features dark wood flooring , natural leather sofas and a black-and-white reclaimed wood fireplace
Hyde Bellagio promises an indoor / outdoor experience overlooking the hotel ’ s famous fountains . to front the DJ booth . The upper living room sports a vanity-inspired bar made of high-gloss black carved wood , while a private study features wood-clad walls with bookshelves and a desk offering items for sale such as books , festival masks and candles .
Hyde Bellagio ’ s signature cocktail is a cucumber watermelon margarita , and small bites from Osteria del Circo are served from 5 p . m . to 11 p . m .
