“ Safety is the new luxury ,” says the general manager of an English estate hotel , where guests can eat dinner inside walled gardens , on the terrace or pretty much anywhere on the expansive grounds — as long as they are a safe distance from others . One Beverly Hills hotel is spending thousands on single-use linen placemats : “ It ’ s a needed expense ,” the F & B director says . Sometimes , though , observant hoteliers can tap into unexpected revenue . “ The best thing is to go where the light is , and the light is where the customer tells you it is ,” says the MD of a resort in Napa Valley .
