MAKING IT PERSONAL At The Old Man & The Sea , the stone grill and ceramic kitchen island with stove-top burners overlook a fishing cove in Aruba . “ People don ’ t want to leave ,” Vieria says . The hotel ’ s chef , Annelott Ellis , crafts breakfast for each guest and one three-course meal per stay from this outdoor kitchen .
The idea to hire a chef for the property came about after Vieria and his mother noticed that guests seemed overwhelmed when it came to using the outdoor kitchen . “ Our chef will help build a three-course meal for our guests because it can be a lot to manage ,” he says . Ellis helps guests shop for and cook their meals while sharing her knowledge of local cuisine and ingredients .
“ Our guests get to work with our chef to create meals using local ingredients like okra and local sausages ,” Vieria says . Guests are welcome to have hamburgers and hot dogs if they want , but the hotel team encourages guests to branch out . “ It ’ s like a show and tell , and we get to show our guests the foods that are specific to Aruba ,” he says .
The Desert Riviera ’ s Roland sees the outdoor kitchen as another space offering guests the opportunity to connect with the locale and with each other . “ We have guests come year after year and use our kitchen to make dinners together ,” she says . “ Being able to help our guests gather with people they love . That ’ s what we ’ re here for .”
