Famous Italian Chef de Cuisine
Eraldo Colazzo, who has a wealth of
experience from top rated Michelin
Star restaurants in Italy and around
the globe, will be showcasing his
culinary flair at Baan Thalia, Anantara
Hua Hin Resort’s signature Italian
restaurant, plus an exclusive menu
to surprise diners from 1st December
2015 to 28th February 2016.
Blending rustic tastes and
contemporary flair, Baan Thalia serves
modern Italian cuisine in a cosy yet
elegant dining room with new and
old world wines from the extensive
collection in the cellar. Perfectly in
synch with the restaurant’s authentic
hallmarks, Chef Colazzo was
born and raised in Rome, and his
Italian heritage is matched a great
gastronomic pedigree.
Having trained in Haute Cuisine at
the Cordon Bleu Culinary Academy
in Florence, Italy, Chef Colazzo’s
culinary talents have taken him
around the globe, from Italy, Russia,
India and Ireland, to Tunisia, Bahrain,

Saudi Arabia and the USA. He has
graced the kitchens of some of the
world’s finest restaurants, including
Michelin Star establishments and
five star hotels. He was selected for
the Chefs’ team at the British State
Banquet held by H.M. The Queen at
Buckingham Palace in 2008 and was
awarded the ‘Italian Cuisine Master
Chef’ certificate from Italy’s Star Chefs
Forum in 2014 for his commitment for
quality and authentic Italian cuisine.

gathering strength, attracting many business people from
