Chef Massimo’s DELICIOUS FRITTATA WITH SPRING VEGETABLES egg-cellent subs ONE EGG = 1/4 cup of banana 1/4 cup of vegetable oil 2 tablespoons of water with 2 teaspoons of baking powder and 1 teaspoon of oil 1/4 cup of unsweetened applesauce with 1/2 teaspoon of baking powder Photo by Stephani Buchman DIRECTIONS INGREDIENTS 4 4 Tbsp. ½ cup 1 bunch 2 Tbsp. 1 cup 1 Tbsp. eggs parmigia no grated green peas, lightly crushed (fresh peas must be blanched, frozen use as is) chives, cut 1” length parsley, chopped white onion, julienne fresh marjoram, chopped 2 bunches green onions, roasted whole 2 Tbsp. butter and more to finish 3 Tbsp. olive oil salt and pepper to taste parmigiano for shaving on top 1. Crack the eggs in a bowl. 2. Add the grated Parmigiano, crushed peas, parsley, marjoram and some salt and pepper. 3 Use a fork to beat lightly. 3. Preheat a non-stick frying pan. 4. Add the oil, butter, onions and season with salt and pepper. Cook gently until completely soft and dry. 5. Add the chives, toss in the pan for a few seconds, then add the egg mixture and stir. Incorporate the onions within the eggs. Over medium heat stir gently while the frittata cooks. This will make for a fluffy frittata. Once the eggs are firming up, start shaping the frittata, place in a preheated oven at 350°F to finish cooking. It should take about 10 minutes. 6. Remove from pan and allow it to cool. Place the roasted green onions on top of the pie. Drizzle some olive oil and a good amount of shaved Parmigiano over all.
