HOLIDAY ROAST CHICKEN

Stay on budget with this delicious roasted chicken recipe . Feeds a crowd without the price tag of traditional turkey . All the flavour , minus the guess work .
Ingredients . Preparations .
Preheat oven to 400 degrees . Whisk together ¼ cup of olive oil , 1 tbsp 3 1 / 2-4 lbs whole chicken of honey , and 1 tbsp fresh lemon juice . without giblets 1 small handful of fresh
Season the cavity of the chicken with salt and pepper and brush rosemary sprigs some of the basting mixture inside the chicken . Stuff the cavity with 1 small handful of fresh half of the fresh rosemary and thyme sprigs , sliced lemon peel , garlic thyme sprigs cloves , and a few pieces of the sliced onion . Don ’ t overstuff the cavity ; Peel from one small lemon , pack it loosely with room to breathe . sliced 2 garlic cloves
Truss the chicken ; Season the chicken with salt and pepper .
2 large onions , peeled and sliced
Line the bottom of your roasting pan with foil . Take remaining Salt and pepper sliced onions and place them in an even layer on the bottom of your 1 / 4 cup olive oil roasting pan . Drizzle 2 tbsp of olive oil and rest of herbs over the 3 tbsp honey , divided onions . Use a large spoon to toss and coat the onion slices with herbs 1 / 2 cup white wine and olive oil . 1 / 4 cup chicken broth
Place the chicken onto the bed of onions . Pour half of the basting Fresh rosemary and thyme mixture over the chicken , using a brush to coat it evenly . sprigs for garnish ( optional )
Cover the roasting pan with foil ( nonstick foil is best ). Pierce a few small vents into the outer edges of the foil with a knife . Place covered roasting pan into the preheated oven and cook for 45 minutes . Then remove foil and cook for another 30 minutes ( until golden brown )
